Smoked Sirloin Roast

Wanted to try something new and quick so I decided to smoke some beef.  Found some great sirloin roast at Costco and some great tips on the OBS board and went for it.

Smoked it for 4 hours (Oak) at around 215 then kept until IT was 125.  FTC'd for 2 hours and threw it in the fridge overnight (after trying a little sliver first!).  Great smokey flavor, perfect consistency, and great taste.  I seasoned with Lowry's, kosher salt, and crushed black pepper just as do my steaks and it has some nice kick to it.

This is carved up but you can see by the knife what the bark looked like.


When I do this again, which I will, I might try to inject it a bit but finished product was fantastic. Serving with provolone, horseradish mayo, red onion, and tomato on crusty bread.  I have some au jus on the side in case I feel like dipping.
