I find it really easy to use long tongs and my splash proof Thermapen. In addition to the Thermapen having a really fast read time, it also has a very small diameter probe which is nice too.

There are a number of members here that use them for almost anything. I use mine on the grill a lot as well. They are not cheap but they work very well. Here's a link.

 A while back I called them and asked if they had any refurbished units. Got one with full warranty for $79 including shipping.
