It helps if you hook up your PID correctly.  I'm 2.5 hours into a smoke on some beef short ribs and I've been watching how much smoke has been coming out of the smoker and it seems like there just is not enough coming out.  Finally went out there an am really trying to figure out what the heck is going on.  Found it!  Had the PID hooked up to the smoke generator instead of the heating element, so everytime the smoker got up to temperature, it would kick the smoke generator off.  Figured it out because I had a bisquette turn into ash on the burner and the smoke generator was blinking on and off whenever the PID would kick on and off to add heat.  Lesson learned the hard way!

I've stop running my SG thru my PID, even if they

are both going to the same plug.

Just a little less taxing on the PID.

Been there, done that, then when I had it correct, I took a picture of the connections and keep that in my smoker binder, now I check each time to make sure.
