I got a Original Bradey Smoker and I am eager to try it out. I was wondering if anyone has tried to make a fatty with ground turkey or chicken? I know good quality ground poultry wil be low in fat which could adversly affect the final product, but I was thinking that wrapping it with bacon mich help alleviate that.

Any advice would be appreciated.

Welcome!

Give it a shot..  You'll probably have to call it a 'Skinny', though.   :D

I would mix a 40% lean ground beef and 60% ground turkey or chicken. Even with the bacon I think the turkey will end up too dry.
Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

Ground turkey?  I saw some of that in the grocery store the other day and thought it had been misplaced from the Lawn & Garden Department or somewhere.  Now you're telling me it's food?  What won't they think of next?

If you can find a can of processed turkey that stuff has a lot of fat in it and god knows what else. Might help keeping it moist.
