Salmon Jerky

Posting the recipe first. Gotta go see if i can get some good salmon for this.

Honeyed Salmon Jerky

1/4 cup honey
1/4 cup Dark Rum  ;D
5 crushed allspice berries or 1 tsp ground
1 Tbs lemon juice
5 crushed peppercorns (any color)
5 whole cloves
1 bay leaf
1 tsp salt
1 pound of salmon strips
1/4 tsp liquid smoke (opt for dehydrator)

Note.

This is for a dehydrator. If you plan on putting smoke to it remember your cure #1. 1 pound you will need just a tad under 1/4 tsp.
If you do more than 1 pound make adjustments to the recipe.

Mix all the above ingredients together (except salmon) and let sit and come together for 30 mins. Put salmon in a container and cover with the marinade for a min of 1 hour. The longer the marinade time the better.

You can Reveo this under vac seal only. Dont tumble it or you will have salmon paste.

This sounds good! I want to see the results before trying myself. Last time I bought Salmon it was $10.99LB ::)

Well Ok then, going to roll some smoke over it.



1/2 tsp cure #1 mixed with 1/4 cup water added to the marinade for a few hours.
