The guy who did the demo I stole techniques from was Lee Richardson, a New Orleanian and Katrina refugee now at Ashley's Capitol in Little Rock.  He trained under Besh back in the day.

Thought the ingredient list looked a lil familiar.  My wife and I just watched a Besh show on some local access channel.  Despite our culinary differences (she's New Orleans/Creole taught and I'm Cajun correct  ;D), we both raised our eyebrows at the thyme and worcestershire sauce.  But, as Besh said during the show "That ain't how my momma made it!"

I've seen thyme used in gumbo (other than seafood) since I was a kid but not sure when Worcestershire sauce started showing up.  It works well, though.
