Big ol Brisket

Taby came home this weekend and guess what she wanted. Yep, Brisket.  ::)

So I dug this bad boy outta the freezer, you think it will fit?  :o



Got er all trimmed up, the flat.



Squished a bit to fit the rack.



The point and a hunk of beef that was on the point.



In the smoker with 4 hr Oak and the cabnet temp set at 220 F for an over nighter. In the morn the IT was at 130 F so I put 2 more hr Oak on it. Then by 4:00 it was ready for an couple hr FTC.





Dinner time, my plate is on the left, Taby's on the right.



Made a rue outta the drippings then made some killer gravy.

What about the point and the hunk?



Pulled beef!

Looks good Curt!! Taby must be working on that girlish figure and not working out for Softball!! Not nearly enough protien on her plate to build muscle with. ;D

She had another plate after watching a movie, 2 small meals are better for ya than 1 big meal, so she says.  ::)
