Doing about 15 pounds of cheeses today.

Using the PID to get the temp up a little. Outside temp is 62 F.


Using my home made electric smoke daddy clone for the smoke.


Top rack is Cooper Sharp cheese. Middle rack is Horseradish cheese. Bottom rack is Mozzarella, Provalone and Roasted Garlic cheeses.
The horseradish and roasted garlic are NY sharp cheddar with horseradish or roasted garlic added. Both are very tasty.


Going to get 3-4 hours of maple pellets, I'm out of apple.  :(
But it will be great.  :)

You need a big old knife switch mounted on it for effect.

Thanks Pat. I had the Honeywell controller from a customer who wanted it replaced with a different controller. I had to fix it first but its a great industrial temperature controller. I added a timer and wired it so if I want to turn the heat off after a period of time, I just turn the selector switch on and set an alarm in the instrument to tell it when to start timing. I other words if I do not want to start timing till the smoker reaches a certain temp, I set that temp in the alarm and when it is reached the timer starts timing. When the timer times out it will turn the power to the heating element off. I can also turn the timer off and just set what ever temp I want. I can also ramp up to temp at pretty much any rate I want. 10 degrees per hr, 30 degrees per hr and so on. Works great and I can hold +-1 degree F.

I was going to put a PLC and a small touch screen on but that was going a little too far even for me.  ;D
