Hi All!

Got the Bradley Jim Beam model digital baby!!!  Love the chrome door and may have to switch from 'Ol No. 7
to Jim Beam to keep it honest...

Got 4 years on the Weber Smokey Mountain charcoal smoker under my belt, but got tired of tending the coals
and didn't want to go the "PID" route and dropped out for a year (I missed my "Q" a LOT!)  I've smoked a LOT
of foods, even homemade baked beans!

The Cameron's Stove Top Smoker did fill in for a year, but the delights were always on the "wet side".  ABT's were
marginal at best...  No fault of the Cameron's as it did what it said it would!

1st smoke was supposed to be pulled pork, but too much Mr Light in the cut to pull it, so it made superb sammiches
with 'slaw!

2nd smoke (last night) was Family-Style Spare Ribs, Beef Ribs and good ol' ABT's.  Well, it blew away any WSM I have
ever made and there was "Bark" on the meats!!!

I am IN :)  Can't wait to do cheese on this baby!  Tough to at best on the WSM unless it's the dead of winter...

Ate left overs last night (stone cold out of the fridge)
and it was even BETTER!  To me a real test is the
"stone cold" left over test!

Sunday will be a bottle of "Beam" and either a stuffed
chicken or a butterflied chicken with Jim Beam Bisquesttes!

Fortunately "Jack" doesn't mind a mild transgression :)
