Cheater Cheddar Brats

For a Friday night camp out I made a quick batch of cheddar brat using Penzey's Bratwurst Sausage SEasoning.

I used:
4 1/2 pounds ground venison
2 1/2 pounds ground pork
7 TBS Penzey's Bratwurst Sausage Seasoning
2 cups Hi Temp Cheddar
1 cup cold water

mixed in my KA Pro mixer, next time I'll do 6 lbs instead

into the 5lb stuffer

They came out great. :)

Nice Job on the Brats, they look excellent!!! I checked out your Blog and noticed you are raising some bee's. I raised bees for a couple years and it was a lot of fun and a sticky hobby ;D I lived in the country and got tired of driving 100 miles a day to work and back so sold the property and left the bees with local bee keeper, I would definately do it again.

The brats were a hit at the cookout!  I took 2 1/2 lbs of them and came back with one brat :)

I caught a 3lb bass and brought it home and had a fried bass dinner last night, too.

Yes, I have bees and I love them so far.  Luckily they are on our property  :D

Really nice lookin brats Carolyn...my brat twisting just gets these old hands mixed up so we just tie it off with string, it works for us... :D

Looks great Carolyn. When I make mine in the vertical stuffer. I use the 3 cranks, pinch and twist method away and towards like Nepas suggested. The 3 cranks keeps them all about the same size. It works great until you have a few barley pops and start forgetting which way you went last!!

I do the pinch thing.  ;D

Step on the foot switch (got a motor on my stuffer) and when the sausage is as long as my fist with my thumb straight out I pinch the casing and hold till the next is the same.

Do this till the whole casing is full, then twist like Rick and Chris stated or if you have to many refreshments twist every other one the same way.
