Heating element died

Was doing some ribs and my heating element died on me so am finishing them off on the grill hope they turn out. Anyway i was gonna do a 12 lb brisket tomorrow can i still smoke it even though it dont cook and then cook it in the oven??  was gonna smoke it for 5 hours was just wondering if it would hurt anything just smokeing that long with a burned out element

Has anyone cold smoked a brisket for 4 or 5 hours then cooked it in the oven??? And at what temp in the oven?

GR and I may differ on this one.  I'm not sure how comfortable I would be cold smoking the brisket for 4-5 hours unless you truly set up the smoker for cold smoking, even adding ice in the tower to hold the temp down.  The reason I say this is if you leave the smoke generator attached to the tower and run it for 5 hours, the temp in the tower will most likely exceed 125 degrees and I wouldn't be comfortable having a piece of raw meat in that environment for 5 hours.  Others will come along and give you better info than me and I will certainly yield to them.  As for the temp in the house oven, somewhere between 225-250 should work.

I agree with Kynola. I would worry about bacteria growing in that environment. If you could keep it above 160F you would be ok but below that and your taking a chance unless you can get the temps below 100F. I think you would be ok for a couple of hours but anything longer than that I would be concerned.

Now if the brisket was already frozen then it might work to thaw and smoke at the same time for a few hours but I would still try and keep the cabinet cool...

yes thats what i was scared of 4 hours is pretty long might be better off waiting till i get a new element

WOW called bradley they are sending me out a new element plus a door and faceplate with switch very good service they really seem to stand behind the product they make

Not sure where you live, but here in the north east with the temps running in the 90's + I would have to error on the side of safety, even as badly as you want this brisket to be done, I know you would feel bad if it ended up as a bad situation.

yes i hear you there i decided to wait till the new element comes dont wanna take a chance of it spoiling.
