trail bologna & kielbasa

Well got my meat mixed and stuffed. Smoking day to tomorrow. Will post pics soon. Thought id share some results. First should have bought 40 mm instead of 32 for kielbasa. But these will fit a bun nicely. I have recommended kitchen aid mixers for grinding and stuffing. Im getting a different train of thought now. LA is great for grinding 5 or even 10 sometimes. But been doing 10-20 lb. batches and grinding isn't to bad. But stuffing is taken forever. So as soon as I can afford it. New grinder,stufferand mixer. By the way mine is a LA pro 6 with all steal gears and tyranny. Wouldn't try with any thing smaller. So I bow to you all and will admit its wrong to expect any thing more out of them. Well need some rest. Good smoking all!

Well if your in the market for a new stuffer that will do large loads might I suggest the Kirby stuffer. Just send pickman_95 a message and he will set you up for sure.

Well the only problem is I have to get the funds. Already talked to him. Been a lot of medical probs of late. But thanks for helping.

Well got the pork cut up and ground.

Stuffed and it looked good. This was mikes so it had some powdered milk too and I used the cellulose casings.

Put in Bradley and threw smoke to her and all looked good until a few casings exploded! sorry no pics. No problem though dug them out and cooked them the rest of way for lunch.
After smoking threw it in a roaster at 160-170 water bath. That's when the real trouble happened. Seemed the casings filled up with oil or water. Lots of it! When punctured it shot across the room. Hurried and peeled casings trying to stop as much water from being sucked up as I could. this is after the peel

So not knowing what to do I washed excess fat off and dried. Also layed them on a towel on table to dry. Still got a lot of water in them. Not sure if when they dry they'll be  worth keeping or not. Could always treat the dogs I guess.

Smoked at 140  about 4 hrs. Put it in water bath 160-170. Looking for ideas. What did I do wrong? By the looks I cooked the fat out but not sure how. Also why did the cellulose casings suck up water? Not real happy with this batch sure hopes the trail comes out better.

Well trail is out and so far it looks good. Hanging now will check it in the morning. Pics to follow.
