Bacon Sizzlers

Some of you know I have a favorite old time meat market where I go buy my meat.  This week I was looking at their ad in the newspaper and they are advertising "Bacon Sizzlers".  1/4 lb patties of some sort of bacon goodness.  Well, it got my attention so I went out there to investigate a "bacon sizzler", $2.29/lb.  I find the bacon sizzlers and indeed they are 1/4 lb patties so I grab a sack of them.  My friend Allen who is the 3rd generation butcher of this little country meat market says "you ever tried those?"  When I said no he just smiled and said " Oh my God, 85% pure bacon."  That was enough for me and he was right.  Cooked up three of those bacon sizzler patties tonight and all I could think of was "Oh my God!"  I'm fairly confident that the other 15% of those patties is pure pork fat given the amount of grease that cooked out of those patties.

These will make the ultimate BLT or lay them right on top of a hamburger with a slice of cheese for the ultimate bacon cheeseburger. :P :P :P

I'm thinking you put two on a plate. Then put some hash browns on top of the sizzlers and cover the hash browns with a biscuit and some gravy. Top it off with a couple of over easy fried eggs and a few dashes of hot sauce. Dust it with some salt and pepper and go to work hehehe.

Sounds like something Somebody around here needs to try and replicate. 1/4 pound patties you say??

Sounds like a good use of the trimmings when squarin of a slab of bacon.

I take it they were made of ground bacon.

Yep, ground bacon.  Looks just a like a 1/4 lb hamburger pattie, just a lighter color.
