Muebe Nuggets and NFL Sunday Ticket on DirecTV ....

Started with a 2.25 lb bottom round. Trim and cut to cubes.





Using Soy Vay Veri Veri Teriyaki, Cayenne Pepper, Soileau's, Ground Cinnamon and Instant Cure #1.



After trimming I have 1lb 10oz of meat.



Dumped the meat into a bowl to be mixed.



3/8 tsp..Instant Cure #1
3/8 tsp..Cayenne Pepper
1/4 tsp..Soileau's
1/4 tsp..Ground Cinnamon





Next...



Make sure to thoroughly stir ingredients together.



I add to my FoodSaver Quick Marinator and to the frig.



After 6 hours in frig...



I placed the little nuggets onto a couple of jerky racks and started my Bradley - using my PID set to 150f.

Thirty minutes later...



I placed the racks inside my Bradley...

Now back to watching some FOOTBALL!

Five hours in at 150f...

Had to do a little change over - my heating element went out. I quickly put everything into my SS 4 rack unit and continued...

At the 6 hour point I removed the nuggets and recoated with more Soy Vay Veri Veri Teriyaki. I will continue this for about another two hours.

I've got 4 new units out in the garage and still have the original from my SS unit.
