I sure love your roaster. I am keeping my eye out for one. I would like to have it for doing smaller batches. I would still bring out the big tank for larger jobs but having something like you have would be great also. I think it is a great idea and I hope others take note.

Kirby, I've estimated that this vintage turkey roaster will hold approximately six 2-pound stuffed muslin bags (similar to what I used in this thread)—so about a 10-12 pound load. I do need to check the amount of water displacement before actually going into action, and also see how much the load impacts recovery from a temp swing.

In lieu of using food-saver bags ($) to encapsulate the chubs before poaching, I may do what I saw recommended in a few books: double-wrap the chubs in good cling-wrap & twist-tie the ends. Cheaper, for sure, but I need to experiment & see what's the better option.

Do you have a vacuum sealer if not I think I would use heavy freezer zip lock bags. I afraid that the plastic wrap will leak. I think I would trust a zip lock bag but the best would the best would be a vacuum seal bag. You can make a long one and wash it out and keep it for another project.

I do have a vac seal, but I'm being cheap........ ;D

I think I'll try the ziplock bags too, as you sated, probably less likely to leak than the wrap.

If you are in Southern California you CAN get the real thing. Major Market (Escondido) carries it. Its about $10/lb, cheaper than online.

Im not sure if their other location does or not. I havent checked but also supposedly available at the Farmers Market on Fairfax. Huntingtons and Marconda's/

well here in PA you can get the original Taylor everywhere. I think the original is pretty nasty tho.
