Stuffed Chicken Breasts

So my new obsession is plannin stuff to smoke on the weekends.  These are currently in the smoker......gonna be ready for supper with a couple hours of apple smoke and a couple hours of finish cooking.

Ham wrapped in provalone inside.  The wife is excited about this.


In the meantime, I've got this bad boy chillin tight in the fridge.  Gonna try my first overnight smoke to have the pork ready for football tomorrow.  The rub contains whatever I happen to grab out of the spice cupboard.  Chili powder, cumin, garlic, seasoned salt, hickory salt, pepper, etc.

3 1/2 hours later.....ready for a couple minutes under the broiler.....the wife begs for crispy bacon



And this guy is coming up to room temp, getting ready for action.



House smells like meat.  Glorious.

Great job on the chicken...they really look tasty.  Chicken breasts are always not the same thickness unless you pound them out, so bound to have a couple drier ones.  Which IMHO still gunna taste great!  Better than to raw!

Pork butt is finished 11 hours later.  IT of 195.

FTC for 4 hours before kickoff.
