More Bradley snack sticks

I made some more ground beef jerky sticks using my new LEM jerky gun. I used a 5lb mix of 80/20 chuck. Meat was seasoned with Backwoods regular jerky mix, some cayenne pepper for heat, and cure#1. Started the Bradley with convection fan on to 155F. Gave them 5 pucks of Applewood smoke. Slowly progressed to a finishing temp of 170F. Drying time was 6 hours ;D

Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)
OBS(Auberins dual probe PID, 900w finned element & convection fan mods)
2011 Memphis Select Pellet Smoker
BBQ Grillware vertical smoker(oven thermostat installed & converted to natural gas)

I've been wanting to do some sticks, but I wasn't ready to jump into stuffers, casings and the like. This looks like my next step. Now I need to look into the guns. Thanks for the inspiration.

This is the gun I have. It works great and comes with a seasoning and cure packet :)

Thanks Muebe - I was too quick on the trigger. I ordered mine before I looked at your reply. I looked at Amazon and didn't find this page you linked, so I went to LEM and bought the same thing for the same price, but bent over for $8.95 in shipping >:(  Ain't it the way!  Anyway, I look forward to giving this a try. Thanks again.

Now you have to think this through.  Do you really want too?  Once you start you will be hooked.  You will never be able to stop.  It is not too late to turn back!  ;D

Honestly, making sausage is so much fun.  When I grow up I want to be like Kirby.......churnin out 60 pounds at at time LOL



Enough ain't enough and too much is just about right.

Sailor you just have to keep out a sharp eye for the road kill and you will have enough for a big batch.

Not really but I have found this time of year there are many hunters that have not finished off last years wild game. It is a good time to find friends that want to do it on a share basis.  I have not had to do that lately but I used to do it quite a bit of the time. I ended up with more meat then I needed.
