Smoked Steelhead as Entree??? Help

I am reposting this here in general. I have it under Fish but I think it might get seen quicker here....

Help.....I want to smoke a steelhead for our main entree not the kind we would use as an appetizer or snack. It's a good sized fillet.
How would I do that differently from the recipes I see most here?

I used Kummoks recipe for Smoked Steelhead that I bought at Costco.  You can't go wrong with that recipe for Salmon, Steelhead, and probably other fishes ... Here's a shot of Smoked Steelhead being used as an entree for a light Summer dinner.  It was scrumptious  :P :P ;D

Habanero Smoker

You can convert many of your favorite salmon dish recipes easily for the Bradley. I generally will season the salmon and/or marinate it. Place it in a 250°F preheated Bradley and cook until the internal temperature is 140°F, or to your desired doness. Make sure you oil the rack well. Another method is to apply the smoke then move it to the oven or grill.

You may get a few boogers (white blobs) :), but they are not harmful or alter the taste of the fish. If you want to present it without the boogers, you can easily remove them by dabbing with a paper towel.

Thanks Smoker Pete and Habanero.... I have it marinating in something similar to Kummok's recipe right now. Will only be able to be in for 2 or 3 hours. Then will do exactly what you suggested Habanero... Have Bradley fired up now getting ready for it. I will report back in a few hours.

Ok....... 1st time steelhead smoke, AMAZING.....
Didn't have much time. 2 hrs of marinating in Kummok's recipe. Then smoked for 1-1/2 hr. I know it does not abide by all the guidelines, however it was a home run. Here's one of the racks coming out..AND....Look how moist.
