If you were going to build your own smoker, where would you start?

I'm thinking about building my own smoker using some form of cabinet, an Auber PID, and the Bradley smoke generator.

Is there a way to advance the bisquettes in the BSG automatically using the PID?

What would you use for the cabinet?

Ideas, comments? :)

I would go the proofer route.  Several of the guys have converted proofers and from what I understand they are very happy with them.  Mr. Walleye AKA Mike has been a big help in converting proofers.  Here are several of his posts to get you started.

Pikeman AKA Kirby converted a RR Switch box into a smoker that he can get at least 60 pounds in.

Red Green converted a car into a smoker.  ;D  Moral of the story is if it can be closed up and air tight then it most likely can be converted into a smoker.  There was a poster a while back that was doing a conversion on an old porcelain fridge.  Keep us posted on what you decide to convert and please post photos of the conversion.


Enough ain't enough and too much is just about right.
