Went to see my butcher today ...

... and he tends to treat me right.

It's more fun making some of this stuff yourself.  He makes his own sausage and bacon and it's real convenient for smaller quantities.

For dinner tonight:  Round bone shoulder lamb chops.  1.9 pounds.



Got some sausage.  Jalapeno on the left, beer sausage on the right.  2.3 pounds total.



Got a pound of his bacon, sliced.  Wanted it NOW.



More bacon.  He started curing a slab of Berkshire pork belly this morning.  I had him cut a hunk off for me, about 3 pounds.  I'll finish it and smoke this weekend.



He gave Deb and I a taste of the lamb jerky he was trying out, still on the dehydrator rack.  Pretty good.  He also threw in a small bag of beef jerky.

A couple of notes. 

The sliced bacon doesn't look 'red' because he doesn't use nitrite.  He uses 50/50 salt and brown sugar, then a hickory smoke.  Believe me, it's good.

He does the jerky with a marinade/dehydrate.  No smoking.  No smoke you say?  It was good enough to win first prize in a state wide food competition this year.

The bill was $36 for everything.

Nice Arnie.  I need to travel over there again, I wish he were closer.

I don't get the deals that Arnie does but it's well worth it.
