I was looking at a recipe for prime rib and found one that sound great. I have used a brinkley smoker in the past but just got a new bs at xmas. I was stumped by fts till it found it mentioned in the forum. My question now is if I do a prime and ftc for 2,3 or 4 hours wont the roast get cold? If so what do I do to heat it back up without causing it to become over done? A brand new bs user.

that ftc really feaks me out... this is why...

after removing the beast from the smoker... when imediately wrapped in foil... then imediately wrapped in a towel... then imediately placed in a cooler...

the temperature of the beast will keep rising a bit even with no other heat source than its internal breaking down of tissue...

it will then maintain and slowly lose temperature as the foil and towel are insulators and the cooler prevents its heat from escaping...

some folks call it a resting period when all the juices googoolate...

i will ftc a 190 deg brisket for 6 to 10 hours and when i unftc it will still be warm and sometimes hot to the touch... all of its juice retained and ready to slice and serve...

i will ftc a 150 deg porkloin for 4 to 8 hours and when i unftc it will still be warm and juicy... ready to slice and serve...

i will ftc a 130 deg rib roast for 4 to 8 hours and when i unftc it will still be hot and juicy... ready to slice and serve...

so you can smoke... then ftc... then serve... you gotts to figure in ftc time when planing grub time...

you could smoke the beast in south jordan utah... ftc it and put it in the car and drive 7 hours to the north rim of the grand canyon and when you unftc the beast will be ready for a lovely sunset picknic...

you may want to wait till summer for that road trip...

phone guy... been in iowa since leaving arizona on dec 2nd... at the wenches moms about 1.5 hrs n of waterloo by minnesota ... been here too long... heading back to chicago tomorrow... thank goodness...

i was thinking this palce may turn int enumclaw... the goats and sheeps were looking mighty fine recently... and yesterday one of the cows spewed out a calf... at least we gotts lots of fresh pig and cow here...

we will be back in norcal in june or so...

Well sitting around watching cows birth might be alright if you have a lounge chair and something cold to drink. [:0]

Say, how fresh is that pig anyway?[;)] I mean if you're coming this way maybe an extra passenger wouldn't hurt.

I just smoked a BB. Took it out of the BS at about 1:45 A.M. and my daughter wanted pulled pork for breakfast. She is pretty smart and we thought that sounded good so we had pulled pork and bbq for breakfast. I have it pretty good.

owrstrich, let me know when you two are going to be up here and I'll throw some babby backs in. You're always welcome.

hello im new to the bradley smoker its my first smoker of any kind so if someone could fill me in on this it would be much appreciated what is/does (ftc)-(fts) stand for please be gentle on the responses lol

ftc= foil, towel, cooler

After smoking, say a brisket or ribs, its a good idea to wrap the meat in foil then a town then place in a cooler. Some add a little apple juice before wrapping in foil. This keeps the meat moist and warm. It allows you to plan dinner by smoking early to insure the main course is done and then remove it from the cooler when you are ready to eat. The meat will stay hot for hours using this method.
