very nice!! It's kinda nice to have a good mentor isn't it? That shot of the plate says it all, "might be a little bit of labor but the final reward is awesome".

Great Job.

We may have to have a smokeout this summer with the locals and see if some of the others might be passing thru and join all of us.

Hi Pete,
I believe that you are my brother in law, your wife and mine must be sisters. They have the same look when we make snags and I always clean the mess up.
After seeing all these photos and the plate loaded with wonderful food I will invite myself for dinner.
The unevenly smoked sausages could be due to overloading your smoker and your sausages are touching. I used to have the same problem awhile back.
The frankfurters look good though, you are destined for much bigger batches of sausages for sure.

Nice looking sausages!

I've had uneven color on some batches—usually do possibly overcrowding of the smoker, touching of links, and 'uneven' smoke distribution.
Now I spread things out a bit more, no touching or crowding, and will rotate the load halfway through the smoke time if the color isnt looking uniform.
