Snack Sticks ready for Christmas....using A. C. Legg seasoning

I'm also doing A. C. Legg Snack Sticks for our Christmas Give Away Baskets.

Started with Ground beef and A. C. Legg Snack Stick seasoning....


Mixed ingredients until tacky.


Frig overnight.


Next Day








Now to start the smoker....
PID set at 120 for one hour...



Then I moved to 130 and started added smoke.


After 3 hours of smoke and increasing the temp 10 degree an hour until I hit 170. Cooking until the IT hit 152.

11 hours later.



After blooming for 2 hours...



Ok that's done - time to move on to more items for our Christmas Baskets.

ok the suasage looks great !! and one of these days I'm gonna try that AC leggs, but my  real question where did you find the metal horns for what I believe to be a Weston stuffer as mine came with palstic ones?..... Happy New Year everyone. Thanks Tim

my weston has metal tubes also

Hey Tim, purchased the Weston back in late 2010, a 7lb unit from Cabela's.

The stuffer is a two-speed, all-steel gear system lets you smoothly stuff and quickly refill. Includes three funnels (10mm, 20mm and 30mm) for stuffing everything from largediameter summer sausage to breakfast links.

hey guy's, I got the 11# weston and it came with plastic tubes, weston was good about sending out new tubes as the one we use a lot was cracked and I was concerned about cleaning it good enough, didb't want any bugs taking up residency the crack, new ones and they had the same scratch marks however no cracks, I would love to find a metal set of the tubes, as for the stuffer I think it's great would reccomend it to anyone.  Tim
