Fresh Breakfast Sausage using Zach's Sausage Seasoning.

Well I've been in the mod of making sausage the last few weeks. Decided to make some breakfast sausage for my daughter and her roommates.

I started by deboning a pork shoulder that I purchased from Sam's.

Note: make sure you remove the gland before grinding. Failure to do so can result in a bitter bit.




After the meat is cut in strips and ready for grinding, put it in the freezer for about half an hour.
Also, put the grinder head, meat pan and the container you?ll grind the meat into in the refrigerator and chill.

Using my Lem Stainless Steel #8 .35HP Meat Grinder that I purchased a few weeks back at L&M Fleet Supply




Seasoning....
Using Zach's Sausage Seasoning, crushed peppers and some extra sage.


Mix ingredients together with 6 oz of water.


Next, refrigerate mix overnight.

Man I love when that door bell rings!

Next morning after talking with Sonny/CRG, he reminded me about a post that Curt/OU812 did - making breakfast sausage without using casings.



Using another new toy....



Covered several cookie sheets with wax paper....


Using my jerky gun and the round jerky attachment.




I was able to get 3 trays done and then to the freezer for one hour.

I also decided to make a few patties - 4 packs of 4.


Then with what was left I decided to package some in bags....


Back to the links - after the one hour in the freezer...


I decided to package in 6's and 12's.
Using wax I placed the links and wrapped....




I also vac sealed...


I made a couple of patties up before hand to fry - this mix was left in my jerky gun.


Will be posting a few pic's of the links tomorrow once we have breakfast.

I made 144 links, 16 patties and package 2 rolls of sausage - all for less than $20.00

Notw bad - but a lot of work!

Sausage making is a labor of love.  Lot's more work involved then going to the store and buying sausage but you can't beat homemade sausage.  You know what was put in the sausage and you make it to your liking.  Your breakfast sausage really look good.


Enough ain't enough and too much is just about right.

And a quick breakfast before heading out to Sam's Club to purchase a few more pork shoulders.......Going to be making Kielbasa this morning.
