More Jerky......Hot Jerky for Christmas

Well last night before hitting the bed I mixed up some beef and LEM Hot Jerky Seasoning and placed in the frig until tomorrow.

Now this seasoning is HOT!!

Today......



Eight racks of jerky getting ready for the smoker.


I set the PID to run at 120 for 1 hour without smoke and will then bump it up to 130 with smoke. From there I will bump it up 10 degree every hour.
Well, I actually only going to give this 4 hours in the smoker.



Four hours later time to try my new LEM Food Dehydrator out...


2 1/2 hours later....




Dang!!! Did I mention that this Seasoning is HOT!!!
