Whats Wrong With My Nuggets?

I am 4 hrs into my first attempt at Muebe nuggets and they don't look anything like the pics I have seen from others.

Mine don't look very appealing, in fact they look like little black rocks. I tried one and it is still very red in the middle and very chewy on the outside. The outside is like leather.

I don't have VERI VERI and just used some other brand of Terriyaki together with some soya, sesame oil and garlic powder. Marinated the cubes in a vac sealed  container overnight and into the smoker at 160* this  morning.

I'll trade anyone with an oversupply of Muebe Nuggets for my little black rocks. They might be good in a sling shot for shooting game birds.

It doesn't sound like they are done.

What cut of meat did you use?

I use eye round for jerky nuggets.

Thanks FLBR ----- I used outside round because it was on sale. They are still in the smoker with the temp set at 160* and I plan to leave them for awhile yet.  I will check (eat) one every hr until they are done inside, or too hard to eat. They sure taste good but am glad I don't wear dentures.

I really think your problem is the lack of the soy vay veri veri teriyaki. I think the soy vay has enough sugars in it that it gives the meat a moist candy like coating that retards the drying of the surface. This allows the center to have time to get done with out overdrying the outer surface. Some give the nuggets a basting some where in the middle of the smoke which just adds to the taste and adds some new moisture to the surface.

Thanks Pikeman. That makes sense.

The outside is definitely dry. After they were finished they tasted great but they are real tough to chew. I guess it is more of a mind set. I was expecting the tender looking morsels that others have produced not jerky. But I like jerky so I just have to think of them as jerky nuggets and then all is well. My dog realllllllllly likes them.

I thought about dipping them in more sauce but the nuggets were already really dry at the 2 hr mark and I noted that others recoated theirs after a lot more time.

Where does everyone get the Soy Vay from?
