Did Someone Say Tri-Tip?

I bought these beauties last week at Costco.  After a little aging in the refer,and trimming, I seasoned them up.  My usual is garlic salt and coarse black pepper with OO to make a paste and a generous rub down.  This time I wanted to try my little sampler from Oak Ridge BBQ,  Santa Maria Steak seasoning.  So after some trimming, I generously applied the rub, then back into the refer for 24 hr.

   

Then into the Bradley @ 220* until IT was 130*, out and FTC until dinner time, about 1 hr later.  Cut across the grain and get ready to plate.

   

The 130* is rare in the center,  the way we like it,  although it was probably 135* after FTC .  The small end is med-rare.



With home made salsa, greens and  home cooked beans.  The Amb. T was 62* with light wind at the time of the cook.  The dual element Bradley took 0.62hr/# to achieve the 130* IT.

to the rub you usually use.
