A little about myself, I'm from central Louisiana an enjoy making sausage an cooking for family and friends. After about 15 years of using a block smokehouse to smoke my sausage I decided to design an electric smokehouse with a Bradley smoke generator. But thanks to all of you guys on this forum I've decided to just purchase from Bryan at yard and pool the following,

New OBS 611
Extra racks
Frog matts
Bubba pucks
Hickory biscuits
Apple biscuits
And a dual probe Auberins PID controller

Placed my order last Friday so I'm patiently waiting for my new smokehouse an accessories.

This is a great forum I've been reading post an gathering info an ideas for the past few months. I will be posting pics of my creations soon.
