Well smoking mty Turkey legs today. Will make an excellent supper.

I also have a 8lb. loin laid out. Figure some Canadian Bacon and since I'm out of  Canadian bacon .

Also going to make a naked pork roll. Going to stuff it and smoke. Then cover in homemade pork gravy. Haven't seen any one do it, probably because of the bacon keeping it moist. Figure I may brine and no cure just for flavor and moisture.

Also pulled 5 1 1/2 lb each country ribs out to thaw. Cut them myself from Pork Butt. Going to Rub smoke and BBQ. Just not decided  to go wet or dry!

Also pulled out the large Ham bones I have and some of my pork butt bones and scraps. Going to get out the broth pot and make up some canned pork broth for emergency use.

Suppose to get 1-3 inches of snow next few days and cold. And who ever said when live hands you a lemon make lemonade   didn't know us smokers very well Huh?
When Life hands me a lemon I start smoking and kicking back. Let the rest of the world stress it! LOL

sounds like a great plan, i would smoke / cook the turkey legs in the smoker and all the pork ribs, bacon, pork rolls  and alike together, .. My concern is contamination from turkey over to the  ham..I  personally would not take the chance.... other then  that  have at it and enjoy

Well the Turkey Legs are smoking now.

The loin and bacon and ribs will probably all be different days this week. Got to thaw the rest, brine the bacon and prepare the roll.

Well had the spring chores in full forward motion! Got a new boat for Erie and redid the out drive and boat and trailer. I have been busy. But with the snow I just said Im on vacation till it warms up. Wensday or Thursday I think. So figured smoker in the garage why not smoke.
So just catching up on some recipes and stables Im running low on. Turkey Legs, Canadian Bacon,Ribs and Stuffed loin roll. If still cold and snowy I'll unfreeze more. If not im going fishing LOL.
