Made up some stuffed bell peppers last night. I looove these things.

Cut off the tops, remove the seeds and then chopped the tops to put in the filling.

Almost forgot a key ingredient.  :o

All cooked up then added some cheese.

Stuffed and ready to cook.

Got some filling left, a meal in its self.

Made up some dinner rolls too.  ;D

Looks excellent!!

Another thing you may wan to try is cut the peppers into 1" thick rings, and stuff the filling inside the rings and smoke/cook them. It like a hamburger inside a pepper ring. They come out really good, and you can easily make sandwiches out of them.

Never try to teach a pig to sing; it wastes your time and annoys the pig.

One of my favorite meal's since I was a kid. But the peppers ten to get burnt some times and pretty rubbery. So quite a few years ago I had the wife make ever thing as usual. With one small change. We cut the peppers in 3/4 -1" chunks And stir into the mixture instead of stuffing. Peppers we think come out a lot better and softer. Try it you may like it. But they do look prettier that way. ;)
