Mexican Chorizo (Ruhlman, Polcyn version)

It's been awhile since I've been able to work on sausage, I couldn't stand it any longer so I grabbed my book opened the pages and decided to make Mexican Chorizo. 

With my mentor (Kirby) being laid up for awhile, I had the privilege of being the first to try his new and improved version of the Kirby Cannon.  Wow, I don't know how to explain how wonderful this machine is.  Fortunately Kirby was able to help me put this video together showing just how awesome this is.  How lucky are we to benefit from his ingenuity and his willingness to help all of us!

Nothing real special 'bout the chorizo, but it did turn out pretty darn good..... great with scambled eggs, fried potatoes, and cheese all wrapped up for a nice breakfast burrito.

Your absolutely correct, Kirby has done a great job on both the stuffer and mixer. I really enjoy using mine.  ;)

Special thanks to you as well for the spread sheet to customize recipes. It will come in real handy.  ;)

Oh ya... great job on the Mexican Chorizo as well!  ;)

Chorizo looked good.It had to taste great with the venison in it.lol

If anyone is interested in hooking up their stuffers with a foot control set up, here are the links for the parts. I posted the foot control a while back but I had not located links to all the parts. This is a simple project and can be done in a evening. It does work very well. when you click the foot control the meat starts coming out at what ever speed you set on the hand speed control valve. When it is in off mode the water pressure is shut off and any pressure on the piston is bled off instantly around the speed control valve so once set you never have to reset it for the rest of your project.

now the valves. you will need two of these. They are made to hold against household water pressure and are better then washmachine valves

the foot control is from Harbor freight. You have to take the switch apart and unsolder the black and white wire form the external plug-in that is in the switch and solder them together. This allows the current to come down to the switch in the black wire and back up from the white wire. This wire goes to the coil on the relay. We are adding indicator lights to the valve coils so that the operator can tell which valve is actuated. The stuffer is silent and it makes it easy at a glance to tell if it is bringing the piston down or if it is in off mode.
