I tried smoking a couple of times last fall and never had any luck. Finally figured out that my heating element was bad and Bradley replaced it. However, about the time I got it fixed I had several problems come up and just now being able to get back. I smoked a brisket this past weekend and it was good but I never could get the PID set right. I read the tutorial but I guess I'm getting too old to understand that.
If I want to smoke something until an internal temperature of 225 and have four hours of smoke, can someone go through the steps I would use to do that?
Is 225 a good finished temp on brisket?
I remember this site is great about helping newbies so I hope I'm not too big a pain.

Hey Mike . . .
Ive got a DBS and have had issues lately (since replacing my hi temp sensor and heating element) of getting up to temo when cooking 2 pork butts.  I thought about adding a dual element PID to resolve the issue.  Do you think this would do the trick ??

PID and dual elements are two different things.  The PID will control dual elements in the Bradley but adding a PID controller to the single element Bradley will not make the chamber temp go any higher.

Adding a second 500W heating element will certainly boost the performance of the smoker.  You instantly double the heating capability when you do that.  It is not recommended to add just a second element without adding a PID controller to manage it.  You don't have to spend $145-$180+ for a PID.  Auber sells them for as low as $45 that you can install in your smoker generator box.  With a K-type TC, SSR, heatsink and a few miscellaneous parts the total cost would be around $70-$80.

I added a second element to my OBS and a $45 Auber PID controller.  It was a little DIY work but I like the results.  I'm smoking some baby back ribs on it right at the moment.  I just smoked four 8-lb butts in it last Friday.  Last one reached 195*F in 14 hours.

I really like mine dualed out with the PID. It preheats quick and holds temps once it gets there within 1 degree.
