Temp. Difference ??

Hello All,
I just got done seasoning my new DBS. I set the temp. for 150 like it said to do. but the whole seasoning process the temp. said it was around 172. Why is that ??
Is it because its hot out side? (in the 90's... but the smoker was in the shade) Even had an external thermometer that also read 172. I'm confused already and i haven't even smoked any food yet...LOL.

The temp censers on these things are not the best. Having a swing of twenty degrees is not uncommon. Having that external thermometer is a good idea for your future smokes and will give you a better idea of where the temp is.

Don't worry about the temp swings. Just set it and forget about it. To a certain extent off course.
Check your other thread on the thermometer and meat temp.

Had the smoker set for 160.... the temp. said 180. and my external thermometer said 145 when i was doing jerky last night.
Very confusing. though the jerky came out ok.

On a DBS the thermometer is mounted on the back wall where the heat comes straight up that wall. Depending in where you had your other thermometer mounted, you would get a different reading due to uneven temps within the smoker or the probe above some meat or below some.
Some of us have installed fans to circulate the air inside. Therefore evening out the temps. That's a whole other thread. Some have had luck some not so much. You still end up rotating racks. At least I do with my 2" fan.
