3 Lbs Ground Round
1 Lb Lean Pork
1 Lb Pork Fat
2 Tbls kosher salt
2 Tbls fresh ground pepper
1 Tbls red pepper flakes
1 Tbls graulated garlic
1 Tps cure #1
1 Cup Ice Water

Total Cook Time 4 Hours @ 220, Smoked With Hickory 3
Hours of this time.

Good Pepper Taste, Heat Was Subtle, I Might Add Some Cayenne Next Time.
