Venison Snak Stik Help

Hello Everyone,

I'm looking for a good venison Snak Stik recipe.  I've tried the "fake" Slim Jim recipe that you can find by doing a Google search..., and haven't been overly thrilled by it.  They turn out OK, but have a tendency to be a little dry, and don't quite have the flavor I'd like.

I've got about 15lbs. of Vension I'm going to grind tonight, and I'm adding about 4lbs. of Pork for flavor/fat content. 

Any suggestions or experiences that folks would like to share would be appreciated.  Thanks!

A good starter would be AC Leggs Snack Stick blend #116

I like AC Leggs seasonings as well or you can go to the recipe site and see what others have made. You say your adding 4 pounds of pork. Is that pork butt or just pork fat? Reason I ask is venison is super lean and you need some good fat to keep it from getting too dry. I like 85/15 or 80/20 lean to fat ratio for sticks. If the four pounds of pork is butt you may want to add some more fat to the mix. have fun.  :)
