Been absent

I have been absent for awhile, forgot my username so signed up again.   have had an OBS for a few years and love it.   My recent move from Omaha to St. Louis disintegrated my already cracked up faceplate, so I need it some much need TLC. 

Been really enjoying cold smoking steaks, burgers, chicken before throwing on the grill recently.  Just awesome.  Got a cold smoke adapter with Christmas money but did not get it set up at the old house.   Have plans to give my baby a nice permanent home in the new garage and set it up in a permanent cold smoke set up. 

Have two butts in right now for my father-in-law.  He just had surgery yesterday for lung cancer.  He will have have some tasty treats waiting for him when he gets back home.  Been at it for 22 hours at 205,  lower butt was at 175 an hour ago.  Cranked the PID up to 210.  Patience.  My butts always seem to take 24-26 hours at the 205-215 range.  Cant figure out how some get theirs done in 12 hours.

Hope to make a more consistent habit of hanging around here again.

Welcome aboard.  I'm in the St. Louis area, too.  West County (Wildwood).  Depending on how the wind is blowing we might be able to smell each other's smoke.

Did you read the link I posted on how to fix the design error on your faceplate?

Good question Mike.  That was a long time ago.  A while back I contracted CRS (can't remember s**t).   1439 IIRC.  :)  At least that is what my license says. 

Ted,  my butts have been going on 26 hours now and at 183, you should be able to smell them by now.  Got your post.  Will look into it when I get back from spiffing up the old house and the parts come from Y&P.  Looks like I am going to need to stoke those heating elements unless I going to eat Steak n Shake tonight.  Been gone from STL for 10 years, got to hit all my old favorites.  J Box, White Castle, OT Hodge, Uncle Bill's Carl's and finally Prilosec.
