Cure #1 in Muebe nuggets??

I have smoked several batches of jerky, sans  the cure #1.
I have read that a lot of people don't ever use cure. (I always freeze mine and defrost just what I want to eat at one time)
I notice that the Muebe recipe calls for cure.
Is it necessary for the nuggets?

Any time you are smoking at a low temp the meat should have cure.  Danger zone for nasties are between 40 and 140.  Even if the smoker is set to 160 I would personally add a cure to the meat to be on the safe side. 


Enough ain't enough and too much is just about right.

Always add cure when your smoking any jerky, even if you smoke then into the dehydrator.

I add cure even when I <gasp> don't smoke it and go straight to the dehydrator.

I guess I've just been lucky.

Will start using cure #1 in all my jerky. (If I can find any to purchase locally)
If not, then I will push my luck 1 more time until I can find it (on line maybe??)
