Just some beans and ribs (beef)

Decided to make some beef ribs. Set everything up and the pucks wouldn't advance. Took the generator inside and opened it up. Boy was there a lot of sawdust or I guess it is puck dust. Cleaned it thoroughly and buttoned up. Hooked it up to the Bradley and the PID. Nothing. Fiddled with the connections and all started working.

Rinsed off the ribs, patted dry with a paper towel, removed the membrane (or at least as much as I could) and rubbed them down. I was in the Watkins Glen area this weekend for a family wedding. Took a walk in downtown Glen Falls as they were having a car show and had a bunch of street merchants. Saw a booth with some BBQ stuff. They had a number of rubs by a company called "Blazing Asphalt (get the race theme? a local mom and pop outfit). Talked to the guy a while and sampled some of his sauces. They were good but nothing special. I did buy 3 of his rubs. On this smoke I rubbed with EVOO and used the "Cajun Sizzle". Here they are rubbed and ready to go. Put them in the Bradley at 255* with 2 1/3 hours of smoke.


After the smoke portion, I rubbed with some Lucille's Spicy sauce and double wrapped in foil. Put them in meat side down. Cooked them for an hour. Here they are getting sauced (just like the cook)


After an hour I took them out. Unwrapped them and saved the juice. Mopped them with the juice and put them back in (unfoiled) for another 1/2 hour.

With some corn on the cob (made in the SRG of course) and some baked beans.

The ribs were some of the best I have had.

I might have to try makin them again,,,,,,,,last time they turned out like jerky on the bone  ::)
