Sadly I won't be able to try it out until the last week of the year since I'll be going out of town next week and won't be able to baby sit it during the 10 day curing process.  After that it will go in the bag for 3 months to dry.  Oh, I'm talking about Capicola!  Of course I'll post during the process.
