Just an update on cold smoked dry cure back (loin) bacon, it had it's first tasting last night and boy was I happy with the results.  ;D

The other tasters were also impressed, the commonest comment was that is tasted like bacon used to taste. No injected water, no wafer thin rashers, no rashers shrinking away to nothing with lots of gunge in the grill pan..... just plain good old fashioned bacon texture and taste!

Two thirds of the original joint was cured and smoked, one third just cured and I am so made up with both.

Each of the original 3 joints has now been cut into two giving me 4 smoked pieces and 2 non smoked of 3-4lb each, one of each have been kept in the fridge just wrapped in aluminium foil for current use whilst the others have been vacuum packed and stored in the fridge for use at a later date.

Dry curing the meat probably led to a 10-20% loss in original weight.

I trimmed all the joints and plan to use the offcut bacon bits to add to some Boston Beans I am currently making.

Now had about a dozen people taste this bacon, 80% prefer the smoked to unsmoked and a couple of those are people that don't normally like smoked bacon.

However both smoked and unsmoked have both gone down well, don't think it will be too long before I have to order another 25 lb side of bacon! :o

Think I will smoke the whole thing next time and not bother with any unsmoked.

Bacon can kind'a be that way...home made bacon is not quite an aphrodisiac but close...at least around the Mallard household.  There is something to getting a piece of meat, curing it and have it come out like you paid someone $20.00 a pound to do it.
