Habanero teriyaki jerky!

Yesterday 6 lbs. of eye of round roast met their destiny at the hands of the Bradley. For marinade, I used a Costco teriyaki sauce, and added some soy sauce, ginger, garlic, and hot sauce to kick the flavor where I wanted it. I should mention that the hot sauce I used was my homemade habanero hot sauce, which is so damn hot that I just use it for heat in other things.

I preheated the meat in a 180°F oven rather than wait for hours once it was in the Bradley. I still had to wait a while for it to surface dry once it hit the Bradley. I gave it 2 hours of smoke since it was still so wet that I wasn't sure it would take enough smoke flavor. I probably could have given it another couple pucks without overdoing the smoke flavor, and I will do so next time if it stays this wet. The marinade was a lot more viscous than when I used Kalbi sauce as the main marinade, so the meat had more goo sticking to it when it hit the racks.

Everything went well, and I took a couple samples as it was finishing in the dehydrator. I knew it would be warm when I could clearly taste fruity habanero flavor right up front. It is warm, that's for sure, but it's also really tasty. Very pleased with how this jerky turned out. The heat will just cut down on the vicious hooliganism, pilfering, and pillaging that has plagued other batches.  ;D

Ran the dehydrator for about 5 hours yesterday until I went to bed, then shut off for the night and let it rest. Ran it again this morning until everything was done. I'd like to try and fine tune the dehy process to get the moisture out without heating everything up and driving away flavor, maybe I'll experiment with periods of lower temp next time.

I cut it with scissors while still hot and pliable in the dehydrator, this was easy and makes a lot more sense than the slabs I left it in other times. Filled a large ziploc bag. Nice dark translucent color. Good stuff.
