Hi gang, haven't been in for awhile.  Quick question, has anyone ever dry rubbed a brisket then frozen it?  I always dry rub them first and let them sit in the fridge for a couple of days wrapped in plastic wrap.  Just as an experiment, I was thinking about dry rubbing then freezing.  At the price of brisket these days-I don't want to screw anything up.  Any input would be appreciated.  Thanks, Smitty

my opinion is that  the rub would not penetrate the meat  if it was frozen,,, in the fridge it  would

I never froze a brisket rubbed but I do freeze steaks,Chops, and  pork tenderlions with rub and/or marinade all the time.I vacum seal and freeze them. thaw them out in the fridge or cold water. Saves time later the always come out great.

Thanks folks.  It makes sense that the rub wouldn't penetrate well if the meat is frozen.  Steaks & chops that have already been marinated sounds good & it would save some time.   Thanks again !
