Another Noob

Hello everyone, I just ordered my OBS last night along with some frogmats and a  digital remote thermometer. I'm really excited, but kinda overwhelmed. I've never smoked anything before, but I love smoked food. A few friends at work have smokers and I always get some scraps from them. Anyway, it seems there's a lot of good people and info here and hopefully I can make the most of it.

You will be a pro before you know it.  Listen to these real pros on this forum and ask questions,  You might start with something relatively easy like pulled pork.  Takes a while to smoke, but it is pretty forgiving and usually turns out fantastic.

Welcome to the forum Dan.  Great group of people on here and totally helpful   When it gets overwhelming - remember everything was at one time - you didn't learn to walk the first time - same with riding a bike.  Smoking meat is actually quite simple in technique - ya sprinkle something on a piece of meat and ya stick in a smoker at about 225 and smoke/cook it until its done.  But we are human, and as for me - a male human -  which means we like to complicate things and smoking can be made complicated if you want.  Everybody has a favorite - best - way of smoking.  So there is lots of ways to get where you want to go and lots of opinions offered to get you there.  Best advice I can give is to pick a good starter smoke - pork butt has been mentioned and is an excellent choice.  Then sort through and find one "recipe" that sounds good to you - preferably a simple one.  Then do it.  Do not try to reinvent the wheel the first few times - get to know your smoker and your meat before you blaze new trails.    The tendency is to pick what you think is the best from several people's offerings - and that is a recipe for disaster.   Learn first then pick and choose.

Appreciate it guys. I'm going to get the pork butt, and go with Jan's rub, then after I pull I'm going to try 10.5's sauce. Smoker will arrive today, but my bisquettes, and thermometer won't be here till Monday, which is a bummer

We only have two "rules" here:

1.) There are no stupid questions -- So fire away, we were all new at this once ourselves

2.) Pictures - We love to see what others are smoking so post pictures. There's a saying on here that goes like this "No pictures - - Didn't happen"

I'm new here as well but there is a wealth of info available here and lots of good fun folks.

If you are new to smoking you might want to warn your neighbors about your new hobbie.  I fired up one of my first smokers for an 11 hr smoke of a pastrami on a Saturday morning at 5:00 a.m., they almost called the fire department.   ;D
