Pork Butt

Completed my first pork butt.  I injected the meat with Wickle Pickle juice that was left over from a jar we consumed.  The Wickle juice is a sweet and spicy jar of  pickles that can be purchased at most stores.  They have great flavor and a little kick to them.  It makes for a neat marinade/injection.  I then rubbed the butt down with Jan`s Rub ( thanks to Mrs. Jan for taking the time to bring us this awesome rub).   Then vacuum sealed it overnight in the fridge.

Smoked with pecan and cherry alternated every briquette for 4 hours.  11.5 hours later with an IT of 185 we pulled the butt from the smoker

Let the butt hang out in aluminium foil for an hour then pulled out and let it cool down.  Pulled the pork with some bear claws, which worked great, and threw some of the pork into a Brunswick Stew.

Made a few sandwiches with some of the meat and vacuum sealed the rest for another time.  The meat was very moist, highly flavorful, and had a little kick with it.  Definitely a keeper recipe.
