Some Venison Summer Sausage

This my first posting even though i have been a member for  three years  Here is some vension SS  m/w  trimmed pork 50/50 with pikemans recipe added mild cheddar in some it held up pretty good if there was some touching the out side of the fib caseings it melted a little bit but not bad. Grinded once through a 7mm plate maybe next time i will go 4.5 mm but all in all not to bad want to thank pikeman and i did talk to sailor as well. Also NePaSmoker  has been inspiring me ever since i met him at a smokeout years ago. Hope ya all in joy.

SS in hog caseings after ice bathed (Had left over meat so stuffed it into 35mm caseings)


letting bloom cut one caseing alittle on the end my son wanted to see the meat inside

next time probally going to grind alittle smaller but not bad good flavor

Looks awesome!!!  Working my way up to this just stuck with the simple Italian and breakfast sausage for now LOL!

Nice job!
I grind everything with a 6mm plate.  Find the plate that gives you the consistency you like.

Thanks Drano for the info my 1hp only came with a 4.5mm and a 7mm will go to Lem tonight and l will look for a variety of sizes for the future
