Ribs Tip

I don't smoke ribs often, so I don't see any reason to purchase rib racks, or hangers. Today I wanted to do some ribs, and they were longer then the trays. I didn't want to cut them, so I loosely coiled them and stood them up so I could get two "coils" per tray. I smoke at 200F, applying smoke for three hours. At the three hour mark, I took them out to foil them. To my surprise, they uncoiled so I could now lay them flat. I placed them in foil, hit them with a splash of apple juice and put them back into the smoker.

So if you don't have a rib rack you can coil them, so that they will stand up.

Any tips on beef ribs.I am doing those this weekend along with baby backs.In my new 4 rack dented smoker.From kirk.
