Greetings from Alaska, just purchased my first Bradley digital smoker along with the cold smoker adapter. Fitting how the sockeye's are running good and the freezer is getting full. Looking forward to some cold smoking tips. I have a good dry brine recipe and plan on cold smoking then canning some.

Thanks guys my smoker arrived today and already set it up and seasoned it. Gonna pull some fish to brine and will try to add some pics. 3lbs brown sugar to 2 lbs of salt with a small jar of allspice.

Welcome to the forum from Nebraska.  If you need freezer space, you can send some of that salmon here!  They aren't running yet in Nebraska!
