Nervous

I have been smoking an 8 lb beef brisket and 2 pork butts 8 lb each for 11 hours at 220 degrees and the IT is 130 on each.  Eating at 6:30.  Should I be nervous.  Should I increase the temp or be patient.

Bump the temp up to 230-240. If you haven't you can double wrap the butts in foil

Thanks.  Should I leave the Brisket alone or wrap that as well?

Leave the brisket alone. Your going to want to pull the brisket and FTC it when the IT is at 185ish. The butts you will want to run up to 190-195ish then FTC then.

you have 24 pounds of meat and asking a 500 watt element to work pretty hard.  If you are eating at 6:30 I would pull them and put them in the oven at 250.  The oven has more heating power.  The Brisket is going to take at least 12 hrs to cook alone in the Bradley.  Adding 2 butts is adding another 16 pounds to heat and cook. 

So if it were me they would be moved to the oven to finish off.


Enough ain't enough and too much is just about right.

Thanks for the help.  We are at 155-160.  I foiled the pork and left the brisket alone.  The smell is kidding me and I am thirsty for a cool one!
