What should/Do I do with this?

My wife's Grandmother was going to come over to teach her how to make a pork roast.  So I went out and bought what she told me to.  I can't recall exactly what this is but the butcher had to prepare it as it wasn't something you could just get out of the case.  The label says "Pork Loin Chops - Center Cut" and it is 5.13 pounds. 

I told my wife I was going to put it in the Bradley since it is no use to us in the freezer.

What should I do with this thing?  Thanks!

OH and I think it has the bone in it but the butcher slit it up to the bone all along it for some reason.

Sounds like center cut pork chops to me. Rub that baby down with your favorite rub and smoke to an IT of 150*. Wrap in foil and towel and place in cooler for an hour. Rest it a few minutes and slice. The butcher sliced to the bone so you could finish slicing after the cooking. Center cut pork chops.

You could also cure and smoke it like Canadian Bacon, then you could slice into individual thin chops like they do in the German places in South Texas.
