Stepping up to the big leagues...

For my fourth smoke on the Bradley I'm stepping the game up a bit. Total 14lbs after fat trimmed, got it for $25. Jan's rub cuz it was so freakin amazing on the little one I did, and injected with some applejack juice. Smokin for 4 with apple, and then lookin for that 195, hoping tomorrow night. Debating if I want to sauce one or not during process. Will test around 175 but the little one I did was a little tuff to pull at 195 so we'll see. Any thing missing?

4 hours in, smoke done, just changed the water, lookin good, sprayed em with some applejack. big at 140º small at 133º after closing the door. figuring i'm gonna be waking up around 3 to a 175º alarm. all good. oh gus, would love to be doing the adult beverage right now, but on duty for the next couple days so can't drink. next weekends smoke though pictures will most likely be hazy if even existant.

k so almost a huge fail this morning. I stayed up most the night due to the temps climbing pretty steady. the small ended up flat lining at about 150º for around 2 hours I think while the big one shot on up to 170º fairly quick. I pull tested the big one at 175º and it wasn't ready so left em in. if I recall this was at about 4 am( I need to get better at planning times and stuff as I had to work today), well threw em back in, dozed off on the couch for a little bit to get up at 6 for work. woke at 6 to see my temps had dropped on both about 10º, guess who forgot to bump the heater times back up, freaked dashed over to the oven, cranked it to 220º, mosied out and grabbed the butts, threw em in the oven and waited. on the bright side, took a moment to call the boss, told him what happened and we agreed that I would stay home and get this situation taken care of and bring some in around lunch time. so back to sleep I went, woke around 11 with big at 185ºish and the little about to hit 170º. ripped the big one up brought it to work, lasted all of an hour I think. the little one we are having for dinner now and should have left it in longer. either way they turned out great I think due to the injection which kept them rather moist. had a couple guys at work tell me I could put the BBQ joint in town out of business lol. very happy to know Im getting the pork down, trial and error is a great thing, just glad I didn't sleep longer and lose the meat. oh and failed on getting the end of smoke pic. overall though went in at 530pm into the oven at 6am and out around 11am.

Nice save Snoop!  The finishing time on a butt is always up to the pig.  I have had them get finished in 16 hours and also had them take 26 hours.
